Betty`s Banana Butter

Peel and crush the bananas to a fine pulp. Place in a preserving kettle and add the sugar and lemon juice. Heat slowly until sugar has dissolved, stirring constantly. Bring to a full rolling boil and immediately stir in liquid pectin. Ladle into hot sterilized jars and seal immediately. Submitted by John Hartman Indianapolis, IN hartman@indy. net
