
Wash & dry the zucchini. Do not peel them, but cut across into 1/2" slices. Put into boiling salted water & then simmer for 10 minutes. Drain very well & place in a bowl. Chop the onion & garlic finely & sprinkle over the zucchini. Mix together the oil & vinegar & pour this over the zucchini. Cover & let stand for 2 hours. Arrange a bed of lettuce leaves on a serving dish. Drain the zucchini, retaining the liquid & arrange them on the lettuce. Mix the drained liquid with the capers, herbs, salt & pepper.
