Skin the tomatoes & cut them across in slices. Peel the onions & slice them very thinly. Put the onion slices into ice-cold water for 10 minutes to make them very crisp. Drain well. Arrange the tomatoes & onions in layers on a serving dish, beginning & ending with tomatoes. Mix together the oil & vinegar, salt, pepper & sugar. Pour over the salad & leave in a cold place for 30 minutes. Sprinkle with chives just before serving. Mary Norwak, "Salads"
